Trail Mix Protein Bar Cookie- #MAXMunchies

Trail Mix Protein Bar Cookies Ingredients:
½ cup unsalted butter, softened
¾ cup light brown sugar
1 large egg
2 Tsp Vanilla extract
1 ¼ cups gluten-free flour
¼ Tsp Xanthan Gum
½ cup gluten-free oats
1 tsp baking soda
Pinch salt, optional and to taste
½ cup Promax Double Fudge Brownie, diced small
¾ cup dried cranberries
½ cup pumpkin seeds
¼ cup raisins

Directions:
Combine the butter, brown sugar, egg, vanilla in a bowl and beat until well combined.
Add flour, oats, cornstarch, baking soda, optional salt, and beat on low until combined.
Finally add the protein bars, cranberries, seeds, and raisins and beat on low until combined.
Roll into 12 balls and flatten slightly.
Refrigerate for 2 hours covered and then bake in a lined baking sheet at 350°F for about 11 minutes. Makes 12 cookies.
